Cold pressed and unrefined oils rich in Omega 3 fatty acids are of course, VERY good for us. But do you dress your salad with the same oil you cook your eggs with?! This week, a little lesson on oils.
In the past, commercial food companies used a refined form of Coconut oil in the production of many “junk” / refined foods. Because of this, coconut oil received a reputation of being “bad” for us and many stopped using it around the same time that ditched butter.
In the last ten years or so however, Coconut oil has reemerged in health food stores / and in health products everywhere. And for its users, it just so happens to be toting a vast array of health benefits.
In the 1940’s, farmers attempted to use coconut fat to plump up their animals. The result? The animals became very lean and more active. When they switched to corn and soy feed however (which slow the thyroid), the animals became obese. (Superfoods, David Wolfe).
Coconut oil is comprised of medium-chain fatty acids (MCFA’s) and these provide wonderful amounts of energy for the body! Additionally, this amazing oil has been shown to increase metabolism, aid digestion, provide antimicrobial / antibacterial protection, balance blood sugar levels, support the thyroid and the nervous system (which is especially great for growing children), and again, shrink waistlines worldwide!
The most AMAZING thing about Coconut Oil however, and the way it can benefit your health, is that it is extremely stable. Meaning, you can cook at high temperatures with it and unlike many other oils, it won’t go rancid / denature. Oils like grape-seed, avocado, flax, and even olive oil to a degree are of course great us, but the truth is, they are best used on salads, in smoothies, or on food after the cooking process. A general rule to follow, the more omega 3 in the oil, the less suitable it is for cooking. When heated the fatty acids are not only damaged, but dangerous substances are also simultaneously formed.
As with any oil you are purchasing, be sure to buy your coconut oil in a dark glass bottle; all oils are light sensitive! Coconut oil, again very stable, can be safely stored for a long period of time and refrigeration is not necessary:)
Make your stir-fry with coconut oil (for a nice infusion of tropical flavor), use it in your baking, or add a tablespoon to your morning smoothie for all day energy! There are endless ways to incorporate this SUPERFOOD into your diet and the ways that it will serve your health? Also endless.
